This Healthier Slow Cooker Beef Stew is definitely one of my ultimate comfort foods, especially during the winter months. To be honest, I think I could have my Pasta Soup with Sweet Potato and Peas, Instant Pot Chicken Stew, Cabbage and Sausage Stew, Extra-lean Turkey Chili with Kale, Healthy Slow Cooker Red Wine Beef Stewand Turnip and Carrot Slow Cooker Beef Stewfor dinner every night from November until March and be perfectly content. I am lucky that my husband can eat these three recipes all the time during the winter season, too! When it is so cold outside, I guess there is nothing better than a comforting bowl of stew, chili, or soup to warm up. I also love to make this stew because of the aroma it brings to my home. It is so welcoming and delicious!!

I named this recipe Healthier Slow Cooker Beef Stew because by adding more vegetables, such as turnips and parsnips, and using reduced-sodium beef broth, I made this recipe extra healthy for my family. I also reduce the amount of potatoes because they’re high in starchy carbohydrates. For this reason, I don’t like to eat a lot of potatoes. Although, I know that potatoes are still a good source of fibre, potassium, and vitamin C, especially if you eat the skin and prepare them correctly like boiled or baked.

The other thing I did to make this recipe even healthier is that I didn’t add flour to the stew. I know the traditional slow cooker beef stew recipe calls for whisking 2 tablespoons of flour with 2 tablespoons (25 mL) of water, stirring it into the stew, and then cooking it for few minutes until thickened.

But I just didn’t think it is necessary for me. I prepared it avoiding the added white flour, but if you prefer, about 30 minutes before serving, mix the flour and water together in a small dish and add it to the slow cooker. Mix until well combined.

I also browned the meat before putting it into the slow cooker because it adds depth to the flavour that you simply can’t achieve just by letting it boil away in the cooker. Please do not skip this step. I guarantee that your slow cooker beef stew will taste much better if you brown the meat.

FAQs

Is homemade beef stew healthy to eat? ›

It's full of veggies and protein after all. Although traditional beef stew recipes provide more nutrition than many meals, most still plague you with far too much sodium and calories. Make some easy switches to truly have a healthy beef stew recipe you can be proud to share. Most stews use a beef broth for the base.

What are the healthiest vegetables for stew? ›

Carrots and other root vegetables, onions, chard, spinach, and lettuce are ideal for stewing while potatoes, leeks, cabbage, and porcini mushrooms are optimal for braising.

Can I put raw beef cubes in a slow cooker? ›

Yes, you most certainly can cook raw meat in the slow cooker! You put it in “cold”, with whatever liquid your recipe calls for, turn it on either “low” or “high” depending on your recipe (I usually start it on “high” for a couple hours, then turn it to “low”), and in 6–7–8 hours, it's now COOKED meat!

Can you overcook beef stew in a slow cooker? ›

Slow cookers are specially designed to cook food for long periods of time, but yes, you can still overcook in a slow cooker if something is left on the wrong setting for longer than it's supposed to be.

How many calories in beef stew with carrots and Potatoes? ›

Beef stew, homemade, gravy base with potatoes, with carrots or dark green vegetables (1 cup) contains 16.7g total carbs, 13.9g net carbs, 16.3g fat, 12.9g protein, and 265 calories.

Why is beef stew so high in calories? ›

The essential ingredients for stew -- meat, vegetables and broth -- are healthy stuff. The problem is that traditional recipes call for massive portions of fatty meats paired with super-salty canned broths. Don't be turned off by recipes that use wine; a large portion of the alcohol and calories cook away.

Why is my beef stew tough in a slow cooker? ›

Add Just Enough Liquid

If you want the dish to be saucy, or you're making a beef stew, add enough liquid to come about 1/3 of the way up on the meats in the slow cooker. This allows your meat to braise, not boil. Boiling creates tough meat!

What gives beef stew the best flavor? ›

Getting a more beefy beef stew
  1. Mushrooms (Crimini, sh*take, Lions Mane, etc.), browned beforehand.
  2. Dried mushrooms.
  3. Caramelized onions.
  4. Roasted garlic.
  5. Deglaze your pan (since you don't use wine, deglaze with broth)

What is the secret to good stew? ›

"Soups and stews really need to simmer for long periods to allow the ingredients to meld together. Taking that a step further, most soups and stews are better if you prepare them the day before serving. Allowing them to cool and then reheating them really helps bring out the flavors and textures."

Is it better to cook stew on low or high in slow cooker? ›

While many slow cooker recipes can be made on high for 3-4 hours, I highly recommend cooking this beef stew on low for the full 7-8 hours. This will ensure that the beef gets nice and tender. Thicken your stew properly.

What thickens stew in slow cooker? ›

Add a slurry at the end.

A slurry is a mixture of flour and water, whisked together until smooth and added towards the end of cooking; it's a super-simple way to thicken any soup. For slow cooker soups, add your slurry with at least 30 minutes of cook time left so that the raw flour can cook and thicken the soup.

What does stew give to the body? ›

Promotes Heart Health: Stew contains a combination of heart-healthy ingredients, including tomatoes, onions, and peppers. These ingredients are rich in antioxidants and anti-inflammatory compounds that can help lower blood pressure and cholesterol levels, reducing the risk of heart disease.

Is beef stew bad for cholesterol? ›

Beef gets an underserved bad rap when it comes to health, especially heart health. However, research shows that a heart-healthy diet and lifestyle that includes lean beef (like in this hearty beef and vegetable stew!) can reduce risk factors for heart disease, including elevated cholesterol and blood pressure.

Is beef stew good for your stomach? ›

Lean Beef Stew

Beef stew can be made belly-friendly in a number of ways. First, choose beef that is extra-lean and trimmed of fat. Next, reach for a beef broth made without onions or garlic to avoid possibly triggering gas and diarrhea.
