This year for Christmas I wanted to try something a little different from the traditional Chocolate Peanut Clusters recipe. I had butterscotch chips in the pantry and made a last minute change. These easy butterscotch peanut clusters only take 3 ingredients, are naturally gluten free and have a deliciously different taste. But be warned, people looking for traditional peanut clusters, like my son, might ask, “What’s wrong with this chocolate?” Have them take a bite and they’ll be fine with the change! The best part of this easy butterscotch peanut clusters recipe? It takes less than 10 minutes of prep time to make!
Ingredients:
You’ll need:
peanuts (any type works. You can use plain roasted peanuts or get fancier with toffee peanuts, honey roasted, whatever you like)
butterscotch chips
peanut butter
Directions:
Step 1: Melt the butterscotch in chips in the microwave for 1 1/2 minutes. Stir. If mixture is not melted, return to microwave for another minute. Stir until melted.
Step 2: Stir in peanut butter into melted butterscotch chips until completely mixed.
Step 3: Stir in peanuts.
Step 4: Drop spoonfuls of peanut mixture onto a sheet of waxed paper.
Step 5: Place in freezer for 15 minutes or until hardened.

I like how simple these are to make. I think they would make a great last minute gift for a loved one, but I’d have to make a batch to keep for myself too. Nom!

Butterscotch clusters are just as delicious as the chocolate ones. I have even added different flavors like peppermint for the holidays.
